Cheddar Egg Muffin
Non-stick cooking spray
1 sprouted grain English muffin, toasted
1 Tablespoon reduced-fat shredded Cheddar cheese
1 slice tomato
- Scramble egg with salt and pepper. Pour into a small ramekin (bowl) that has been sprayed with non-stick cooking spray.
- Microwave for 30 seconds. Remove from microwave. Sprinkle with cheese and microwave for 10 additional seconds or until eggs are firm.
- Remove from ramekin and place on half of toasted muffin.
- Top with tomato and remaining half muffin.
